Healthy Chocolate Strawberry Easter Eggs

With just 5 ingredients, these gut-loving chocolate puddings are a sugar free, dairy free and delicious Easter treat for both you and bub - with a special surprise in the middle! Made in our Catchy freezer pods

INGREDIENTS:

- Fresh strawberries, tops cut off

- 1/4 cup gelatin powder (I used Nutra organics)

- 200ml coconut milk

- Squeeze of sugar-free maple syrup

- 3 tbsp cacao powder

METHOD:

  1.   Bloom the gelatin by adding it in a small bowl with 1/2 cup water. Whisk until fully combined.
  2.   In a measuring jug, combine the coconut milk, maple syrup and cocoa, adding water until you get to 300ml. Microwave on high for 1 minute. It should be warm but not hot.
  3.   If your cocoa is lumpy, use a sieve when pouring the warm pannacotta into another bowl and add the gelatin. Whisk until fully combined.
  4.   In the catchy silicone pods, add one full strawberry and fill to the top with the pannacotta mixture. Repeat for all pods.
  5. Refrigerate for 2 hours before serving.
